Sweet Easter Regueifa – Recipe:

1 In a bowl, mix the yeast with the lukewarm water and milk, and let it rest for a few minutes;

2 In the bowl of your food processor, add the flour, sugar, and cinnamon, and mix well;

3 Next, add the margarine, eggs, egg yolk, and yeast mixture. Beat very well using the food processor until the dough is smooth;

4 Leave to rise in a warm place until doubled in size (about 1 hour);

5 After this time, on a floured work surface, divide the dough into two equal portions and shape them into two (2) rolls approximately 50 cm long. Twist the rolls together and form a wreath;

6 Cover with a cloth and leave to rise for another 30–45 minutes in a warm place;

7 Finally, brush with beaten egg and bake in a preheated oven at 180°C for 40 minutes, or until the dough is nicely golden.

Also known as regueifa or sweet Easter bread, this is another traditional presence on Portuguese family tables. Often used as an alternative to the “luxurious” and less affordable pão de ló, this sweet regueifa has secured a permanent place in the gastronomic tradition of this season, a tradition that continues to this day.
