The family tradition behind one of Portugal’s most iconic dishes

The secret of this classic national dish lies in the way slow cooking extracts the rich juices from the beef and pork, creating a steaming broth in which canned legumes take on a new dimension. By using the upper steaming tray, the turnip wedges, carrot slices, and Savoy cabbage leaves remain intact and absorb the aromas of the cured pork sausage without becoming too soft. Served with precooked rice on the side, this hearty, gluten-free meal is perfect for bringing the family together around the table for Sunday lunch or celebrating the year’s most traditional holidays.
